Chicken & Veggie "Nuggets" For Toddlers

The Husband and I are pretty good vegetable eaters, but we oven use spices or sauces that H isn't ready for, so I wanted to make her something that would help her get more veggies as she transitions to solids.  She has been over the pureed veggies for a while, so I came up with these veggie nuggets as a way for her to get get more green stuff.

-1 bag frozen mixed broccoli and cauliflower (or fresh is fine)
-Italian seasoned bread crumbs
-1 or 2 eggs
-shredded cheese

1.  Steam the veggies by placing in shallow pan with a bit of water and cooking until very soft
2 . Cut up veggies into very small pieces, almost like shredding them
3.  In a bowl combine veggies, about 1/2 cup of bread crumbs, 1-2 eggs and a bit of shredded cheese
4.  Scoop 1 spoonful onto a greased cookie sheet, and bake at 375 for about 20 minutes, flipping them once half way through

Its not an exact recipe by any means, so you can add in different veggies and more or less cheese, but the basic concept is to create nuggets they can eat themselves.  I froze mine, and take a few out at a time to feed to her.  Just pop in the microwave for 10 to 15 seconds and break them in half.  She loved them so much that I made a chicken version the other day as well!

-shredded rotisserie chicken (it was easy and we ate the other half for dinner!)
-frozen mixed vegetables
-Italian seasoned bread crumbs
-1egg
-1 jar organic pureed veggie of choice (I used carrots as they are more sweet and mild)

1.  Steam veggies and chop into small bits
2.  Shred chicken very finely, smaller than bit size pieces
3.  Mix veggies, chicken, bread crumbs, jar of puree and 1 egg until you get the right consistency
4.  Scoop 1 spoonful onto a greased cookie sheet, and bake at 375 for about 20 minutes, flipping them once half way through

She really enjoys feeding them to herself, and I feel good that they are less processed than frozen nuggets.  Plus, it was pretty cheap and made quite a bit!
