French Toast Casserole Recipe

A friend of mine made this the other weekend while we were on a girl's trip and it was amazing!  I love french toast and this casserole with the blueberries hit the spot.  Perfect for when you are having house guest and want to amaze without too much effort!

You need: 
  • 10 C 1" cubes sturdy white bread (Pepperidge Farm)
  • 1 8 oz package light cream cheese, softened
  • 8 large eggs
  • 1 1/2 C 2% milk
  • 2/3 C half & half
  • 1/2 C maple syrup
  • 1/2 tsp vanilla
  • Blueberries
  • Powdered Sugar 
Sprinkle cubes in 9 x 13 pan that has been sprayed with vegetable spray. Beat cream cheese, adding eggs, one at a time. Add remaining ingredients & beat til smooth. Pour over bread. Cover and refrigerate overnight. Pre heat oven at 375. Let stand at room temperature 30 minutes. Bake 45 minutes. Sprinkle with 2 TBS powdered sugar. Optional: sprinkle with blueberries before baking.

 
Serves 8-10
